Chocolate Quinoa Crunch Bars

These Chocolate Quinoa Crunch Bars are the perfect sweet, snacky treat that won't leave you crashing later. They are chocolatey, crunchy, and surprisingly filling.

Ingredients
  

Main Ingredients
  • 2 cups puffed quinoa Store-bought puffed quinoa works best.
  • 1 cup chocolate chips or chopped chocolate Semi-sweet or dark chocolate recommended.
  • 1/2 cup nut butter Peanut butter, almond butter, or sunflower butter work well.
  • 1/4 cup honey or maple syrup Used for sweetness and binding.
  • 2 tablespoons coconut oil Helps the chocolate melt smoothly.
  • 1 pinch salt Enhances the chocolate flavor.
Optional Add Ins
  • 1/2 cup chopped nuts For extra texture.
  • 1/2 cup shredded coconut Optional, for additional flavor.
  • 1/2 cup mini chocolate chips Add them after cooling.
  • 1/2 cup dried cranberries Optional, for sweetness.

Method
 

Preparation
  1. Line an 8x8 inch pan with parchment paper, leaving an overhang.
  2. In a small pot on low heat, add chocolate chips, nut butter, honey or maple syrup, coconut oil, and a pinch of salt. Stir until melted and smooth.
  3. Turn off the heat and stir in the puffed quinoa until all are coated and glossy. If adding nuts or coconut, stir them in now.
  4. Press the mixture into the lined pan firmly with a spoon and refrigerate for 45 to 60 minutes before slicing into bars.

Notes

Store bars in an airtight container in the fridge for up to 7 days or freeze for up to 2 months. Slice before freezing for easy access later.
