Ingredients
  

For the No-Bake Brownie Base
  • 2 cups crushed chocolate cookies Use any chocolate cookie of your choice.
  • 1/2 cup melted butter Just enough to hold the cookie crumbs together.
  • 1/4 cup melted chocolate Optional, for extra chocolate flavor.
For the Cookie Dough Topping
  • 1 cup heat-treated all-purpose flour Heat-treat the flour for safety.
  • 1/2 cup unsalted butter Softened to room temperature.
  • 3/4 cup brown sugar Packed.
  • 1/4 cup granulated sugar To taste.
  • 2 teaspoons vanilla extract For flavor.
  • 1/2 cup mini chocolate chips For the cookie dough.
  • 1 to 2 teaspoons milk Add if the dough is too dry.
  • a pinch salt To enhance flavor.

Method
 

Prepare the Brownie Base
  1. In a bowl, combine crushed chocolate cookies, melted butter, and melted chocolate until well mixed.
  2. Press the mixture into a lined 8-inch pan evenly across the bottom.
  3. Chill in the fridge while you prepare the cookie dough.
Make the Cookie Dough
  1. In a mixing bowl, cream together heat-treated flour, softened butter, brown sugar, granulated sugar, vanilla extract, and a pinch of salt.
  2. Fold in the mini chocolate chips.
  3. If the dough is too dry, add 1 to 2 teaspoons of milk until the desired consistency is reached.
Assemble and Chill
  1. Spread the cookie dough evenly on top of the chilled brownie base.
  2. Smooth out the top and chill for at least 45 minutes before cutting.
  3. Cut into bite-sized squares and enjoy.

Notes

For a fun twist, try adding peppermint extract for mint chip flavor, or mix in peanut butter chips. You can also drizzle the top with melted chocolate or caramel for extra richness.
