Ingredients
  

For the Chicken Salad
  • 2-3 cups Cooked chicken, chopped or shredded Use leftover roast chicken or rotisserie chicken for convenience.
  • 1/3 cup Mayonnaise Add more if you prefer a creamier texture.
  • 2 stalks Celery, chopped small For crunch.
  • 1-2 tablespoons Red onion, finely chopped For extra flavor.
  • 1-2 teaspoons Dijon mustard For a little zip.
  • 1 tablespoon Lemon juice A squeeze to brighten the salad.
  • to taste Salt and black pepper Essential for flavor.
  • optional Chopped pickles or relish, fresh dill or parsley Add for extra flavor.
For Sandwich Assembly
  • 4 pieces Bread or buns Toasted sourdough or soft buns are recommended.
  • Lettuce and tomato For a classic sandwich.

Method
 

Preparation
  1. In a bowl, combine the cooked chicken, mayonnaise, chopped celery, finely chopped red onion, Dijon mustard, lemon juice, salt, and black pepper.
  2. Mix well until all ingredients are evenly coated.
  3. Taste and adjust seasoning if necessary, adding more mayonnaise or mustard as desired.
Assembly
  1. Take your choice of bread or bun and place a generous amount of chicken salad onto one slice.
  2. Add lettuce and tomato on top of the chicken salad.
  3. Top with another slice of bread and serve immediately.

Notes

Chicken salad can be stored in an airtight container in the fridge for 3 to 4 days. For a fresher taste, keep the bread separate until ready to eat. Avoid freezing if it contains mayonnaise or yogurt, as the texture may turn grainy.
