Chicken Gyro with Tzatziki Sauce

Ingredients
  

For the chicken marinade
  • 0.5 cup plain Greek yogurt For marinating the chicken
  • 1 unit lemon (juice) Juice from the lemon for flavor
  • 2 tablespoons olive oil For marinade and cooking
  • 2-3 cloves garlic (minced) For flavor
  • 1 teaspoon oregano Dried oregano
  • 1 teaspoon paprika For seasoning
  • 1 teaspoon salt To taste

For the tzatziki sauce
  • 1 cup Greek yogurt Base of the tzatziki
  • 1 unit cucumber (grated) Choose seedless if possible
  • 1 clove garlic (grated or minced) For tzatziki flavor
  • to taste lemon juice or vinegar Add to taste for acidity
  • to taste salt To taste
  • to taste dill or mint (chopped) Use whatever you prefer
  • a drizzle olive oil For extra richness
For serving
  • 4 pieces pita or flatbread Soft pita is classic
  • 1 cup sliced tomatoes Fresh for toppings
  • 1/2 cup red onion (sliced) Optional, for topping
  • 2 cups lettuce (shredded) Optional, for topping

Method
 

Marinate the Chicken
  1. In a bowl, mix 0.5 cup yogurt, juice of 1 lemon, 2 tablespoons olive oil, 2 to 3 minced garlic cloves, 1 teaspoon oregano, 1 teaspoon paprika, 1 teaspoon salt, and black pepper. Toss in your chicken and coat well. Allow to marinate for at least 10 minutes.
Make Tzatziki
  1. Grate cucumber, then squeeze it in paper towels until moisture is removed. Stir it into 1 cup Greek yogurt with 1 grated garlic clove, a pinch of salt, lemon juice to taste, and chopped dill or mint. Add a drizzle of olive oil.
Cook the Chicken
  1. Heat a skillet on medium-high with oil. Cook the marinated chicken thighs for about 5-7 minutes per side depending on thickness. For chicken breasts, cook more gently and remove when they hit 165°F.
  2. Let the chicken rest for 5 minutes, then slice.
Warm the Pita
  1. Warm the pita in a dry pan for 20 seconds on each side or microwave under a damp paper towel for 15 seconds.
Assemble the Wrap
  1. Spread tzatziki on the warm pita, add sliced chicken, tomato, onion, lettuce, and feta if desired. Fold and eat immediately.

Notes

Let the tzatziki sit for about 10 minutes for flavors to meld. Store leftovers separately to avoid sogginess. This recipe is scalable and can be adjusted based on personal preference for spices and toppings.
