Wrap Ingredients
  • 4 large flour or whole wheat tortillas Use large tortillas for better wrap stability.
  • 2 cups cooked chicken, sliced Grilled chicken breast or any cooked chicken works.
  • 4 cups romaine lettuce, chopped Chop small to keep it in the wrap.
  • 1 cup Parmesan cheese, grated Freshly grated tastes better but pre-grated is okay.
  • 1 cup croutons, lightly crushed Optional for added crunch.
Homemade Caesar Dressing Ingredients
  • 1/2 cup mayonnaise Base of the dressing.
  • 1/4 cup Greek yogurt Optional for a lighter version.
  • 2 tablespoons lemon juice Adjust acidity to taste.
  • 1 clove garlic, minced Fresh is best, but garlic powder works.
  • 1 teaspoon Dijon mustard Adds depth of flavor.
  • 1 teaspoon Worcestershire sauce For classic Caesar flavor.
  • 1 teaspoon anchovy paste Optional for authentic flavor.
  • to taste salt and pepper Season to preference.

Method
 

Preparation
  1. Make the homemade dressing by mixing mayonnaise, Greek yogurt (if using), lemon juice, garlic, Dijon, Worcestershire, and a few tablespoons of grated Parmesan in a bowl. Season with salt and pepper to taste. Adjust flavor as necessary.
  2. Slice the cooked chicken into thin strips or bite-sized pieces and warm in the microwave for 20-30 seconds if cold.
  3. In a larger bowl, toss the chopped romaine with enough dressing to lightly coat it.
  4. Add the warm chicken, additional Parmesan, and croutons (if using) to the lettuce and toss gently.
  5. Warm the tortillas in a dry pan for about 10 seconds on each side to prevent tearing.
  6. Fill each tortilla with the mixture slightly off-center, fold in the sides, and roll tightly. Slice in half if desired.

Notes

Wraps are best fresh. If meal prepping, store ingredients separately. Use less dressing to prevent sogginess and warm tortillas to avoid cracks.
