Preparation
- Preheat the oven to 375°F and line a muffin tin with paper liners or grease it well.
- In a medium bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined, leaving a few small lumps.
- Gently fold in the cherries.
Topping and Baking
- In a small bowl, mix the flour, brown sugar, and cinnamon together for the topping, then cut in the butter until crumbly.
- Spoon the muffin batter into the cups, filling them about 3/4 full, and sprinkle the cobbler topping on each one.
- Bake in the preheated oven for 18 to 22 minutes, or until the tops are set and a toothpick comes out mostly clean.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack.
Notes
For the best texture, serve slightly warm. The muffins can be frozen and reheated as needed.
