  • 1 bag Frozen hash browns Shredded or small cubes
  • 1 lb Breakfast sausage Pork, turkey, or chicken
  • 6 large Eggs
  • 1 cup Milk or half and half
  • 2 cups Cheddar cheese Mozzarella can be added for extra melt
  • 1 small Onion Optional but great
  • 1 small Bell pepper Optional but great
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 tablespoon Butter or cooking spray For greasing the dish

Method
 

Preparation
  1. Brown the sausage in a skillet and drain off extra grease if needed. If using onion or bell peppers, cook them with the sausage until softened.
  2. In a large bowl, mix together hash browns, cooked sausage, cheese, and seasonings.
  3. In another bowl, whisk together eggs and milk, then pour into the potato mixture and stir until combined.
  4. Grease your baking dish with butter or cooking spray, pour the mixture in, and spread it out evenly. Add extra cheese on top if desired.
Cooking
  1. Bake in a preheated oven at 375°F (190°C) for 40 to 55 minutes, until the top is golden and the center is set.
  2. Let it rest for 10 minutes before slicing, which helps the texture set.

Notes

For a crispier top, broil for 1-2 minutes after baking. Mix in smoked paprika or hot sauce for added flavor. If using vegetables like spinach or mushrooms, ensure to cook out extra moisture first.
