  • 1 lb gold or red potatoes, cut into 1-inch chunks Alternatively, russets can be used, peeled for best texture.
  • 14 oz smoked sausage or kielbasa, sliced Pork, beef, or turkey varieties work well.

  • 1 cup cheddar cheese, shredded Sharp for flavor or mild for creaminess; pepper jack for heat.
  • 1 packet ranch seasoning Or use 2 tbsp homemade ranch mix.
  • 2 tbsp butter Adds richness and enhances cheese melting.
  • 1 tbsp sour cream (optional) For a creamy finish.
Pantry and Extras
  • 2 tbsp olive oil For browning.
  • 1 medium onion, diced (optional) Adds great depth.
  • 1 tsp smoked paprika or cayenne For a gentle kick.
  • 2 tbsp green onions or parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F if using a sheet pan. If using a skillet, heat it over medium to medium-high.
  2. Cut potatoes into 1-inch chunks. Slice sausage into thick coins. Dice onion if using.
  3. Toss potatoes with olive oil, ranch seasoning, a pinch of salt, and smoked paprika.
Cooking
  1. If using the sheet pan method, spread potatoes on a large pan, giving them space. Roast for 20 minutes.
  2. Stir in sausage and onion. Roast another 15 to 20 minutes until potatoes are crisp and sausage is browned.
  3. If using the skillet method, sear sausage coins for 3 to 4 minutes, then remove to a bowl.
  4. Add potatoes to the skillet and cook for 12 to 15 minutes, stirring every 3 to 4 minutes.
  5. Add onion and cook for an additional 3 to 4 minutes before returning sausage to the pan.
  6. Remove from heat and sprinkle with cheese and dot with butter. Return to the oven for 3 to 5 minutes until cheese is melted.
  7. Stir in sour cream if desired and garnish with green onions or parsley.

Notes

Cut potatoes evenly for consistent cooking. Avoid crowding to prevent steaming. Adjust salt to taste at the end.
