Preparation
- Preheat the oven to 350°F (175°C).
- Cook the ground beef with diced onion and minced garlic in a pan over medium heat until browned.
- Stir in the taco seasoning and a small splash of enchilada sauce to keep the filling juicy.
- Warm the tortillas in the microwave wrapped in a damp paper towel for 30-45 seconds.
Assembly
- Fill each tortilla with the beef mixture, roll them up, and place seam side down in a greased baking dish.
- Pour remaining enchilada sauce over the rolled tortillas.
- Sprinkle a generous amount of shredded cheese on top.
Cooking
- Bake in the oven for 25 minutes or until the cheese is bubbly and golden.
- Let the enchiladas sit for about 5 minutes before serving.
Notes
You can add diced jalapenos or serranos for extra heat. Cover tightly if making ahead and refrigerate for up to 24 hours before baking. For freezing, wrap well before baking, and allow to thaw overnight.
