Ingredients
  

Main Ingredients
  • 1 lb chicken breast, chopped Chopped into small pieces for optimal cooking.
  • 1 cup cheddar cheese, shredded Can substitute with mozzarella, Monterey Jack, Pepper Jack, or Feta.
  • 1 large egg Acts as a binder.
  • 1/2 cup all-purpose flour May need slightly more if mixture is too wet.
  • 1 tsp garlic powder For additional flavor.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper
  • 1 tbl olive oil For pan frying.

Method
 

Preparation
  1. In a bowl, combine chopped chicken, shredded cheese, egg, flour, garlic powder, salt, and black pepper.
  2. Mix until all ingredients are well combined. If the mixture seems too wet, add a little more flour.
Cooking
  1. Heat a pan over medium heat and add a tablespoon of olive oil.
  2. Scoop the mixture into the pan, flattening each scoop slightly to form patties.
  3. Cook for 4-5 minutes on each side or until golden brown and cooked through.
  4. Drain on a wire rack or paper towels.

Notes

These fritters can be made ahead and stored in the fridge for up to 24 hours or frozen for up to 2 months. Reheat in the oven or air fryer to regain crispiness.
