Cheesy Cauliflower Tots

Ingredients
  

For the Tots
  • 1 large head cauliflower, cut into florets
  • 2 pieces eggs
  • 1 to 1.5 cups shredded cheese (cheddar, mozzarella, or a mix) Choose based on flavor preference.
  • 1/3 cup breadcrumbs (regular or panko) or almond flour
  • 2 to 3 tablespoons grated parmesan Optional but adds great flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt Plus more to taste.
  • to taste black pepper
  • pinch paprika or chili flakes Optional for extra flavor.

Method
 

Preparation
  1. Steam or microwave the cauliflower florets until soft, then chop them up into small pieces.
  2. Wrap the chopped cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the squeezed cauliflower, eggs, shredded cheese, breadcrumbs, grated parmesan, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Baking
  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper. Use a spray oil for easy removal.
  3. Scoop the mixture and form small tots. Place them on the prepared baking sheet.
  4. Lightly spray the tops of the tots with oil.
  5. Bake for 18 to 25 minutes, flipping halfway through, until the edges are deep golden.
  6. Let them sit for 3 to 5 minutes after baking before serving.

Notes

For best results, ensure the cauliflower is thoroughly dried to prevent the tots from becoming mushy. You can also freeze the tots post-baking and reheat in the oven or air fryer for best texture.
