  • 3 cups cooked chicken, shredded or chopped Rotisserie chicken works well.
  • 2 cups cooked rice Any variety; leftover takeout rice is fine.
  • 1 cup buffalo sauce Use your favorite brand.
  • 8 oz cream cheese Softened.
  • 2 cups shredded cheese Cheddar, mozzarella, Monterey Jack, or a mix.
  • 1/2 cup sour cream or plain Greek yogurt For added creaminess.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • optional chopped green onions For garnish.
  • optional ranch or blue cheese dressing For drizzling before serving.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish.
  2. In a large bowl, mix the softened cream cheese, sour cream (or Greek yogurt), and buffalo sauce until smooth.
  3. Add the garlic powder and onion powder. Taste the mixture and adjust heat and seasoning as desired.
  4. Stir in the cooked chicken and cooked rice until evenly coated. If the mixture is too thick, add a splash of milk.
  5. Transfer the mixture into the prepared casserole dish and smooth the top.
  6. Cover the top generously with shredded cheese.
Baking
  1. Bake uncovered for 20 to 25 minutes, until edges are bubbly and the cheese is melted.
  2. If desired, broil for 1 to 2 minutes for a golden top, watching closely to prevent burning.
  3. Let it sit for 5 to 10 minutes before serving.

Notes

For best texture, use warm rice and freshly shredded cheese if possible. Adjust buffalo sauce to suit taste preferences, especially for kids.
