Ingredients
  

For the cabbage steaks
  • 1 medium green cabbage, about 2 to 2.5 pounds Choose a heavy cabbage with tight leaves.
  • 3 tablespoons olive oil or avocado oil For brushing the steaks.
  • 1 teaspoon fine sea salt Plus more to taste.
  • 3/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika or sweet paprika
  • 1/4 teaspoon red pepper flakes Optional for heat.
  • 1 cup shredded mozzarella For topping.
  • 1/2 cup grated Parmesan or Pecorino Romano Another cheese option.
  • 2 tablespoons softened butter Optional for extra richness.
  • Fresh parsley or chives For garnish.
  • Lemon wedges Optional for finishing.

Method
 

Preparation
  1. Preheat the oven to 425°F and line a large sheet pan with parchment.
  2. Trim the rough end of the cabbage and slice it into 3/4 to 1 inch thick steaks.
  3. Brush each steak with oil and sprinkle salt, pepper, garlic powder, paprika, and red pepper flakes on both sides.
  4. Bake for 18 to 22 minutes until the edges are golden and the centers are tender.
Cheesy Topping
  1. Mix mozzarella and Parmesan cheese. Optionally, dab a little softened butter on each steak before topping with the cheese blend.
  2. Bake for another 6 to 10 minutes until the cheese is melted, bubbly, and lightly browned.
  3. For extra browning, broil for 1 minute, keeping a close eye.
Serving
  1. Garnish with chopped parsley or chives, and squeeze a little lemon over the top before serving.
