Charred Broccoli and Almond Salad

Ingredients
  

For the salad
  • 2 large heads Broccoli, cut into bite-size florets Peel and slice the stems as well.
  • cup Sliced almonds, toasted if possible Adds crunch to the salad.
  • 3-4 tablespoons Olive oil, divided between charring and dressing
  • 1 Lemon, zest and juice Use more for extra zing.
  • 1 small clove Garlic, grated or finely chopped
  • to taste Salt and black pepper Season generously.
  • 1 handful Parmesan, optional For added richness.
  • 1 teaspoon Honey or maple syrup, optional Balances the acidity of lemon.
  • to taste Chopped dates or raisins, optional For a chewy texture.
  • to taste Crumbled feta or plain yogurt, optional Adds creaminess.

Method
 

Skillet Method
  1. Heat a large pan until hot.
  2. Add a splash of olive oil.
  3. Add broccoli in a single layer without crowding the pan.
  4. Let it sit without stirring for a couple of minutes to allow browning.
  5. Flip and repeat until you achieve browned edges and bright green centers.
Oven Method
  1. Preheat the oven to 450°F (232°C).
  2. Toss broccoli with olive oil, salt, and pepper.
  3. Spread on a sheet pan.
  4. Roast for 15 to 20 minutes, flipping once.
Making the Dressing
  1. Prepare the dressing with olive oil, lemon juice, lemon zest, garlic, salt, pepper, and honey.
  2. Toss the warm broccoli with the dressing.
  3. Add toasted almonds at the end to maintain their crunch.

Notes

Dry broccoli thoroughly after washing to ensure it chars instead of steams. Adjust seasoning as needed for bold flavor.
