Ingredients
  

Chia Pudding Base
  • 3 tablespoons chia seeds
  • 1 cup milk (almond, oat, or coconut)
  • 1 teaspoon maple syrup Can substitute with honey or omit based on preference.
  • 1/2 unit ripe banana (mashed)
  • 1/2 unit ripe banana (sliced for caramelizing)
  • 1/2 teaspoon vanilla extract
Caramelized Banana Topping
  • 1 tablespoon butter or coconut oil
  • 1 teaspoon brown sugar or maple syrup

Method
 

Preparation of Chia Pudding
  1. In a bowl, mash half of a ripe banana.
  2. Mix in 3 tablespoons of chia seeds with 1 cup of milk, the mashed banana, 1 teaspoon of maple syrup, and 1/2 teaspoon of vanilla extract.
  3. Stir well to ensure no clumps form.
  4. Cover and chill in the fridge for at least 2 hours or overnight.
Caramelizing the Banana
  1. Slice the other half of the banana.
  2. In a pan, add 1 tablespoon of butter or coconut oil and heat over medium.
  3. Add the banana slices and 1 teaspoon of brown sugar or maple syrup.
  4. Cook until the bananas are melty and golden, about 5 minutes.
Assembly
  1. Top the chilled chia pudding with the warm caramelized banana slices.
  2. Drizzle with any syrup from the pan and serve.
  3. Optional: Sprinkle with cinnamon, nuts, or chocolate chips as desired.

Notes

This pudding can be served warm for breakfast or chilled as a dessert. Stir the chia pudding after mixing and again 10 minutes later to prevent clumping. Use super ripe bananas for maximum natural sweetness.
