Method
Preparation of Chia Pudding
- In a bowl, mash half of a ripe banana.
- Mix in 3 tablespoons of chia seeds with 1 cup of milk, the mashed banana, 1 teaspoon of maple syrup, and 1/2 teaspoon of vanilla extract.
- Stir well to ensure no clumps form.
- Cover and chill in the fridge for at least 2 hours or overnight.
Caramelizing the Banana
- Slice the other half of the banana.
- In a pan, add 1 tablespoon of butter or coconut oil and heat over medium.
- Add the banana slices and 1 teaspoon of brown sugar or maple syrup.
- Cook until the bananas are melty and golden, about 5 minutes.
Assembly
- Top the chilled chia pudding with the warm caramelized banana slices.
- Drizzle with any syrup from the pan and serve.
- Optional: Sprinkle with cinnamon, nuts, or chocolate chips as desired.
Notes
This pudding can be served warm for breakfast or chilled as a dessert. Stir the chia pudding after mixing and again 10 minutes later to prevent clumping. Use super ripe bananas for maximum natural sweetness.
