Preparation
- Melt the butter in a skillet over medium heat.
- Add chopped apples, brown sugar, cinnamon, and salt. Cook for 6-8 minutes.
- Mix cornstarch with a tiny splash of water and stir into the apple mixture, cooking for one more minute until glossy.
- Remove from heat and stir in caramel sauce. Let the filling cool.
Assembly
- Roll out the pie crust and cut into circles or rectangles.
- Place a spoonful of filling on one half of the dough piece.
- Seal the edges by pressing with a fork and chill for 10-15 minutes.
- Cut small vents on top of each pie.
- Brush with egg wash and sprinkle with coarse sugar if desired.
Baking
- Preheat the oven to 400°F (or 375°F if your oven runs hot).
- Place pies on a lined baking sheet and bake for 15-20 minutes, until golden.
- Let cool slightly before serving.
Notes
Best served warm, but can be enjoyed at room temperature the next day. Store in an airtight container for up to 2 days at room temperature or 4 days in the fridge. Reheat in the oven for crispiness.
