Ingredients
  

Main Ingredients
  • 1 pint Cherry or grape tomatoes
  • 8 oz Fresh mozzarella balls (bocconcini or ciliegine) or a block of fresh mozzarella cut into bite-sized cubes
  • 1 cup Fresh basil leaves
  • 2 tbsp Balsamic glaze thick glaze recommended
  • 1 tbsp Extra virgin olive oil
  • to taste Salt and black pepper
  • 12 pieces Small skewers or toothpicks toothpicks for kids, skewers for adults

Method
 

Preparation
  1. Rinse and dry the tomatoes and basil. Pat the basil dry gently so it does not bruise.
  2. If using mozzarella packed in water, drain it and pat it dry. If using a block, cut it into bite-sized cubes.
Assembly
  1. Assemble skewers by sliding on one tomato, then a folded basil leaf, followed by a mozzarella ball. For longer skewers, you can alternate the order.
  2. Arrange the skewers on a plate. Right before serving, drizzle with olive oil and balsamic glaze, and sprinkle with salt and a little pepper.

Notes

Best eaten fresh. If prepping ahead of time, store assembled skewers in a single layer in an airtight container lined with paper towels. Keep the balsamic glaze and olive oil separate until ready to serve.
