Main Ingredients
  • 2 slices Bread (ciabatta, focaccia, or sourdough) Choose sturdy bread for better texture.
  • 4 oz Fresh mozzarella, sliced Pat dry with a paper towel to avoid sogginess.
  • 1 medium Tomato, sliced Use ripe Roma or vine-ripened tomatoes.
  • 4 leaves Fresh basil Essential for flavor.
  • 1 tbsp Balsamic glaze or balsamic vinegar Add a light drizzle, not too much to avoid a slippery sandwich.
  • 1 tbsp Olive oil or softened butter For brushing the outside of the bread.
  • to taste Salt and black pepper Add based on preference.
  • optional Pesto or mayo For extra richness if desired.

Method
 

Preparation
  1. Slice the bread if not pre-sliced and brush the outside with olive oil or spread a thin layer of butter.
  2. Layer mozzarella, tomato slices, basil, and a little salt and pepper on the inside of the bread.
  3. Drizzle the balsamic glaze inside, being careful not to overdo it.
Cooking
  1. Heat a skillet on medium heat for a minute.
  2. Place the sandwich in the skillet, and weigh it down with another pan or press with a spatula occasionally.
  3. Cook for 3 to 5 minutes per side until the bread is crisp and cheese is melted.
  4. Let the sandwich rest for a minute before cutting to avoid molten cheese burn.

Notes

Make sure to dry the mozzarella and tomatoes beforehand to prevent sogginess. Serve with a chilled pasta salad, green salad, or tomato soup for a complete meal.
