Ingredients
  

For the Chicken
  • 4 pieces Chicken breasts or chicken cutlets Cutlets cook faster and stay juicy.
  • 1 tablespoon Olive oil For seasoning the chicken.
  • 1 teaspoon Salt For seasoning.
  • 1 teaspoon Pepper For seasoning.
  • 1 teaspoon Garlic powder For seasoning.
For the Sandwich
  • 8 slices Fresh mozzarella Sliced, not shredded.
  • 4 medium Ripe tomatoes Roma or vine tomatoes are great.
  • 1 handful Fresh basil More if you love it.
  • 1/4 cup Balsamic glaze Store-bought or reduced balsamic vinegar.
  • 4 rolls Bread Ciabatta, focaccia, or a sturdy roll.
  • Optional as needed Mayo or pesto Not required but very welcome.

Method
 

Preparation
  1. Season the chicken with olive oil, salt, pepper, and garlic powder. Let it sit for 10 minutes while slicing tomatoes and mozzarella.
Cooking
  1. Cook the chicken until done through and juices run clear. Let it rest for a few minutes.
  2. Toast the cut sides of the bread in a skillet with a little olive oil until warm and lightly crisp.
Assembly
  1. Assemble the sandwich by layering on the bottom bread: chicken, mozzarella, tomatoes, basil, and drizzle with balsamic glaze. Add mayo or pesto if desired, then top with the other half of the bread.
  2. Optional: Warm the sandwich in the pan for a minute on each side for extra melty mozzarella.

Notes

Pat chicken dry before seasoning to enhance browning. Use ripe tomatoes and don't overdo the balsamic glaze to keep the sandwich from becoming soggy. Select sturdy bread to support the fillings.
