Ingredients
  

Seafood and Vegetables
  • 1 lb Crab legs (snow crab or king crab) Use pre-cooked crab legs for ease.
  • 0.5 lb Large shrimp, peeled and deveined Tail on is acceptable.
  • 4 pieces Baby potatoes or small Yukon golds, halved or quartered Par cook before adding to packets.
  • 1 ear Corn on the cob, cut into chunks
  • 4 oz Andouille sausage slices (optional) Adds great flavor.
Flavorings and Seasonings
  • 4 tbsp Butter, melted
  • 2 cloves Garlic, minced
  • 1 piece Lemon, sliced plus a squeeze of juice For flavoring.
  • 2 tbsp Cajun seasoning Adjust to taste.
  • 1 tsp Paprika Optional, for more flavor.
  • 1 tsp Old Bay seasoning Optional.
  • to taste Salt and black pepper
Garnishes
  • 2 tbsp Fresh parsley, chopped For serving.

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Par cook the potatoes by boiling them for about 8 to 10 minutes until just starting to get tender.
  3. Tear off large sheets of heavy-duty foil, preferably double layers.
  4. Build each packet in this order: potatoes first, then corn, sausage (if using), followed by crab legs and shrimp.
  5. In a bowl, mix melted butter, minced garlic, Cajun seasoning, a squeeze of lemon juice, pepper, and salt.
  6. Spoon the butter mixture over the seafood and veggies in the foil.
  7. Seal the packets tightly and place them on a baking sheet.
Cooking
  1. Bake the packets for about 12 to 15 minutes until shrimp is pink and firm.
  2. If using large crab legs, allow a couple extra minutes while watching the shrimp carefully.

Notes

Serve directly in the opened foil for a fun, casual dining experience. Pair with crusty bread, coleslaw, or a crisp salad. Make ahead of time and refrigerate until ready to cook. Adjust seasoning to taste for spicy or mild options.
