  • 1 pound large peeled and deveined shrimp Tail off for easier eating.
  • 1 tablespoon Cajun seasoning Adjust salt based on seasoning's saltiness.
  • 1 pinch salt Add carefully according to Cajun seasoning.
  • 1 pinch black pepper
For the Skillet
  • 1 tablespoon oil or butter For cooking shrimp and vegetables.
  • 1 medium diced onion
  • 1 medium diced bell pepper
  • 2 cloves minced garlic Add for flavor at the end of onion and pepper cooking.
  • 1 cup long grain white rice You may need to adjust liquid and cook time if using different rice.
  • 2 cups chicken or seafood broth Low sodium is recommended.
  • 1/2 cup heavy cream For richness, half and half is a lighter option.
  • 2 tablespoons tomato paste Optional, for color and flavor.
  • 1/2 cup parmesan cheese Adds creaminess.

Method
 

Preparation
  1. Season the shrimp with Cajun seasoning, salt, and pepper.
  2. Sear the shrimp in a bit of oil or butter until pink, then remove from the pan.
  3. In the same skillet, cook the diced onion and bell pepper until softened.
  4. Add minced garlic for the last 30 seconds to avoid burning.
  5. Stir in uncooked rice and let it toast for about a minute.
  6. Add broth, cream, and tomato paste, bringing to a gentle simmer.
  7. Cover and cook on low until the rice is tender, stirring occasionally.
  8. Stir in cheese for creaminess and return shrimp to the skillet to warm through.

Notes

Keep the heat low once the liquid is added to avoid uneven cooking and scorching the rice. For variations, consider adding smoked sausage, spinach, or using fire-roasted diced tomatoes.
