Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the flour, dry pudding mix, baking soda, and salt until combined.
- In a separate bowl, cream the softened butter with the brown sugar and white sugar until fluffy.
- Add the eggs and vanilla extract to the creamed mixture, and mix until combined.
- Gradually stir the dry ingredients into the wet mixture until no flour streaks remain.
- Fold in butterscotch chips if using.
Baking
- Scoop the dough into balls and place them a few inches apart on the prepared baking sheet.
- Bake in the preheated oven for 9 to 11 minutes, until the edges are set but the centers are slightly soft.
- Let the cookies sit on the pan for a few minutes before transferring them to a wire rack to cool.
Notes
For best results, avoid overbaking. Cookies should look slightly underdone in the center when removed from the oven. Store cookies in an airtight container at room temperature; adding a slice of bread can help keep them soft.
