Dry Ingredients
  • 2 cups all-purpose flour Measure lightly to avoid thick cookies.
  • 1 package butterscotch instant pudding mix Use dry mix, not the cook and serve version.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Essential to balance the sweetness.
Wet Ingredients
  • 1 cup butter, softened Do not use melted butter, as it can cause spreading.
  • 1/2 cup brown sugar Packed.
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1 cup butterscotch chips Highly recommended for best flavor.
  • 1/2 cup chopped pecans or walnuts Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, dry pudding mix, baking soda, and salt until combined.
  3. In a separate bowl, cream the softened butter with the brown sugar and white sugar until fluffy.
  4. Add the eggs and vanilla extract to the creamed mixture, and mix until combined.
  5. Gradually stir the dry ingredients into the wet mixture until no flour streaks remain.
  6. Fold in butterscotch chips if using.
Baking
  1. Scoop the dough into balls and place them a few inches apart on the prepared baking sheet.
  2. Bake in the preheated oven for 9 to 11 minutes, until the edges are set but the centers are slightly soft.
  3. Let the cookies sit on the pan for a few minutes before transferring them to a wire rack to cool.

Notes

For best results, avoid overbaking. Cookies should look slightly underdone in the center when removed from the oven. Store cookies in an airtight container at room temperature; adding a slice of bread can help keep them soft.
