Butterscotch Delight

Ingredients
  

Crust
  • 1 cup Graham cracker crumbs (or cookie crumbs)
  • 1/2 cup Melted butter
  • a small pinch Salt
Cream Cheese Layer
  • 8 oz Cream cheese (softened) Full fat gives the best texture.
  • 1/2 cup Powdered sugar
  • 1 cup Whipped topping or whipped cream Whipped topping is more stable.
Butterscotch Layer
  • 1 box Instant butterscotch pudding mix
  • 2 cups Cold milk Whole milk preferred for best texture.
Top Layer
  • 1 cup Whipped topping
  • 1/4 cup Optional butterscotch chips or crushed cookies Add just before serving.

Method
 

Preparation
  1. In a bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Press this mixture firmly into the bottom of a 9x13 inch dish to form the crust.
  2. Chill the crust in the fridge for about 10 minutes to help it firm up.
  3. In another bowl, mix softened cream cheese and powdered sugar until smooth. Fold in whipped topping until well combined.
  4. Spread the cream cheese layer evenly over the chilled crust.
  5. In a separate bowl, whisk the instant butterscotch pudding mix with cold milk until thickened. Pour this layer over the cream cheese layer.
  6. Top with another cup of whipped topping, smoothing it out evenly.
  7. Chill the dessert for at least 30 minutes before serving to help it set.

Notes

For best results, plan on making Butterscotch Delight the night before serving. Add any fresh toppings right before serving to prevent them from getting soggy.
