  • 1 lb boneless skinless chicken breast or thighs
  • 1/2 cup buffalo sauce plus extra for drizzling
  • 2 cups rice white rice, brown rice, or jasmine rice
  • 1/2 cup Greek yogurt or light mayo for creamy drizzle
  • 1 tbsp ranch seasoning or a pinch of garlic powder and onion powder
  • 1 cup celery, chopped for crunch
  • 1/4 cup green onion, chopped for freshness
Optional Toppings
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup cucumbers, sliced
  • 1 avocado diced

Method
 

Preparation
  1. Cook the rice first. If you have leftover rice, even better.
  2. Cube the chicken breast, season with salt and pepper, and cook it in a hot pan with a little oil.
  3. When cooked, toss the chicken with buffalo sauce until evenly coated.
  4. In a small bowl, stir Greek yogurt and ranch seasoning until well combined. Adjust the consistency with water if necessary.
  5. To assemble the bowl, place rice at the bottom, add the buffalo chicken on top, followed by crunchy celery and green onion.
  6. Drizzle the creamy sauce on top and add any optional toppings you like.
