Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded or chopped Any cooked chicken works such as rotisserie or baked.
  • 1/4 cup Buffalo sauce Add more if you like it hotter.
  • 2-3 tablespoons Ranch or blue cheese dressing Optional but recommended.
  • 1.5-2 cups shredded cheese Use a mix of cheddar, mozzarella, and Monterey Jack.
  • 4 pieces flour tortillas Large or medium.
  • 1-2 tablespoons butter or oil For the skillet.
Optional Add-Ins
  • 1/4 cup chopped green onion
  • 1/4 cup diced red onion
  • 1/4 cup jalapenos
  • 1/4 cup corn
  • 1/4 cup crumbled bacon

Method
 

Preparation
  1. In a bowl, toss your chicken with buffalo sauce. Stir in ranch or blue cheese dressing if using.
  2. Heat a skillet over medium heat and add a bit of butter or oil.
Cooking
  1. Lay down one tortilla and sprinkle cheese over it.
  2. Add a line of buffalo chicken on one half and any optional extras, then top with a little more cheese.
  3. Fold the tortilla over into a half moon and press gently with a spatula.
  4. Cook for 2 to 3 minutes per side until golden and crisp.
  5. Let it sit for a minute before slicing to avoid spillage.

Notes

Use medium heat for best results, and avoid overloading the filling for easier flipping.
