Ingredients
  

Filling ingredients
  • 2 cups Cooked chicken (shredded or chopped) Rotisserie chicken is a great shortcut.
  • 1/2 cup Buffalo sauce Adjust heat to taste.
  • 4 oz Cream cheese (softened) Makes the filling rich.
  • 1 cup Shredded cheese Cheddar is recommended for flavor.
  • 3 tablespoons Green onions (optional) Adds a nice bite.
  • 1/4 cup Ranch or blue cheese dressing (optional) Sometimes mixed into the filling.
Wrapping and cooking ingredients
  • 1 package Egg roll wrappers Look for them near tofu or refrigerated dough.
  • 2 tablespoons Oil For frying or cooking spray for air frying.
  • 1 large Egg Plus a splash of water for sealing.

Method
 

Preparation
  1. In a bowl, combine shredded chicken, buffalo sauce, softened cream cheese, and shredded cheese. Start with less buffalo sauce and add more to taste. If desired, stir in sliced green onions or ranch dressing.
  2. Lay an egg roll wrapper on a flat surface like a diamond with a point facing you. Add a small scoop of filling near the bottom point.
  3. Fold the bottom point over the filling, then fold in the sides, and roll up snugly. Brush the top point with egg wash to seal.
Cooking
  1. Heat oil in a pan to medium or medium-high heat. Fry a few egg rolls at a time, turning until golden brown on all sides. Transfer to a paper towel-lined plate.
  2. Serve hot with ranch or blue cheese dressing.

Notes

Cool the filling slightly before wrapping. Keep wrappers covered to prevent drying out. Seal firmly with the egg wash.
