Ingredients
  

Peanut Butter Layer
  • 1 cup Creamy peanut butter Use creamy peanut butter for best results; natural can work but may separate.
  • 1/2 cup Salted butter, melted Provides a rich base for the bars.
  • 1 tsp Vanilla extract A splash enhances flavor.
  • 2 cups Powdered sugar Adjust based on the consistency of the mixture.
Chocolate Topping
  • 1 cup Semi-sweet chocolate chips Microwave with coconut oil for easy melting.
  • 1 tbsp Coconut oil Use to help the chocolate melt smoothly.

Method
 

Preparation
  1. Line an 8x8 inch pan with parchment paper, leaving extra hanging over the sides.
  2. In a bowl, stir together the melted butter, peanut butter, vanilla, and powdered sugar until it forms a thick dough.
  3. Press the peanut butter mixture firmly into the lined pan using the bottom of a measuring cup.
Topping
  1. In a microwave, melt the chocolate chips with coconut oil in 20 to 30 second bursts, stirring in between until smooth.
  2. Pour the melted chocolate over the peanut butter layer and spread evenly.
Setting
  1. Refrigerate until the chocolate is set, which usually takes about 1 to 2 hours.
Serving
  1. Using a sharp knife wiped clean between cuts, slice into neat squares for serving.

Notes

For best results, use parchment paper to line the pan and let the chocolate cool slightly before chilling. These bars can also be frozen for about 2 months.
