  • 2 cups Old fashioned rolled oats Do not use quick oats or steel cut oats.
  • 1 cup Brown sugar Light or dark brown sugar can be used.
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon A must for flavor.
  • 1 pinch Salt Enhances flavor.
  • 2 cups Milk Any type of milk works.
  • 2 large Eggs Can substitute with a flax egg for egg-free version.
  • 1/4 cup Melted butter or coconut oil
  • 1 teaspoon Vanilla extract Adds bakery-like aroma.
  • 4 medium Fresh peaches Thaw and drain if using frozen; drain canned peaches well.
Optional Toppings
  • 1 cup Greek yogurt For a creamy contrast.
  • 1 cup Toasted pecans or walnuts For added crunch.
  • 1/4 cup Maple syrup For added sweetness.
  • 1 cup Whipped cream For a brunch treat.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
  2. In a large bowl, mix together rolled oats, brown sugar, baking powder, cinnamon, and a pinch of salt.
  3. Add milk, eggs, melted butter (or coconut oil), and vanilla to the same bowl and stir until evenly mixed.
  4. Fold in most of the peaches, reserving a handful for topping.
  5. Pour the mixture into the greased baking dish and scatter the remaining peaches on top. Sprinkle nuts if desired.
Baking
  1. Bake for about 35 to 45 minutes, until the center is set and the edges are golden.
  2. Allow to cool for 5 to 10 minutes before serving. It will firm up as it cools.

Notes

This dish is great for meal prep and reheats well. Store leftovers in an airtight container in the fridge for up to 5 days. For freezing, slice and wrap portions tightly.
