  • 1 lb Carrots (whole or baby) Whole carrots should be sliced into even coins.
  • 3 tbsp Brown sugar Light or dark brown sugar works.
  • 2 tbsp Butter Regular unsalted is recommended.
  • 1 pinch Salt Enhances sweetness.
  • 1 pinch Black pepper Optional for flavor.
  • 1/4 cup Water Or a splash of broth for added flavor.
Optional Add Ins
  • 1 pinch Cinnamon For a warm bakery vibe.
  • 1 tbsp Orange zest Adds a citrus flavor.
  • 1 tbsp Parsley For garnish.
  • 1 tbsp Honey A drizzle for sweetness.

Method
 

Preparation
  1. If using whole carrots, peel and slice them into even coins on a slight angle.
Cooking
  1. Add carrots to a skillet or saucepan with a splash of water and a pinch of salt. Cover and simmer until just tender; for sliced it usually takes 6 to 10 minutes, for baby carrots 10 to 14 minutes.
  2. Uncover the pan and pour off most water, leaving a spoonful or two. Add butter and brown sugar, and stir gently.
  3. Keep heat at medium and stir for a few minutes until the sauce thickens and clings to the carrots. Adjust salt if needed.
Finishing Touches
  1. Add pepper if desired, and sprinkle with parsley. Serve warm.

Notes

For a silky glaze, if the sauce becomes grainy, continue stirring over medium heat until smooth. If making ahead, refrigerate and reheat in a skillet with water and a dab of butter to revive the sauce.
