Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 9x13 pan with parchment paper, leaving some overhang.
  2. In a bowl, mix the flour, brown sugar, and salt. Cut in the cold butter until the mixture resembles crumbly sand. Stir in the egg and vanilla until it holds together.
  3. Press about two-thirds of the dough into the lined pan evenly.
  4. Pre-bake the crust for about 10 minutes to prevent sogginess.
Making the filling
  1. In a small saucepan over low heat, melt the butter, then stir in brown sugar and cinnamon.
  2. Add flour or cornstarch and a splash of milk, stirring until thick and glossy.
  3. Spread the filling evenly over the warm crust.
Baking and Cooling
  1. Crumble the remaining dough over the filling to create a topping.
  2. Bake for 20 to 25 minutes or until the top is lightly golden and edges are set.
  3. Cool completely before slicing to avoid a gooey mess.

Notes

For variations, you can add a glaze of powdered sugar and milk, mix in nuts, or try different sweeteners like maple syrup. Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to 6 days.
