Ingredients
  

Main Ingredients
  • 8 pieces Flour tortillas (burrito size) Choose flexible ones that do not crack.
  • 10 to 12 pieces Eggs For a batch of 8 burritos.
  • 1 cup Breakfast sausage or bacon Optional but adds flavor.
  • 1 package Potatoes (frozen hash browns or diced cooked) Frozen hash browns are easiest.
  • 1 cup Cheese Cheddar, pepper jack, or a blend.
  • 1 cup Bell pepper and onion Totally optional.
  • to taste Salt
  • to taste Pepper
  • to taste Garlic powder
  • to serve Salsa or hot sauce

Method
 

Preparation
  1. Cook your meat first (if using). Brown sausage in a skillet, then scoop it out onto a plate.
  2. In the same pan, cook your potatoes until crisp and golden. Season them well.
  3. Add onions and peppers if using them, and cook just until they soften.
  4. Whisk eggs with a pinch of salt and pepper, then scramble them gently until just set.
  5. Lay out tortillas and add fillings in the center: potatoes, eggs, meat, cheese. Do not overfill.
  6. Roll the burritos by folding the sides in first, then rolling from the bottom up.

Notes

Let the fillings cool before wrapping and store each burrito wrapped in foil or parchment paper for the fridge or freeze tightly in foil for long-term storage. Reheat using microwave or skillet as preferred.
