Preparation
- Heat the oven to 325 F.
- Pat the shanks dry, season well, and lightly dust with flour if you want.
- Brown the shanks in a heavy pot with oil. Do not rush this part.
- Remove shanks, then cook chopped onion, carrot, and celery until softened.
- Stir in crushed garlic and tomato paste for about 1 minute.
- Pour in red wine and scrape up all the brown bits.
- Add broth and herbs, then return the shanks to the pot.
Braising
- Cover and braise in the oven for about 2.5 to 3.5 hours, until the lamb is very tender.
Final Steps
- When the lamb is done, pull the shanks out and simmer the sauce a few minutes to thicken.
- If you like it smoother, strain it, but keeping the vegetables adds a homey touch.
Notes
Let the lamb rest for 10 minutes before serving. You can prepare the dish a day in advance for better flavor. Also, if the sauce tastes sharp, it may need a pinch of salt or a tiny bit of sweetness.
