Ingredients
  

Base Ingredients
  • 1/2 cup unsalted butter, softened Room temperature for easier mixing
  • 1/2 cup granulated sugar
  • 1/3 cup light brown sugar Adds caramel flavor
  • 1 large egg, room temperature For even mixing
  • 1 1/2 teaspoons vanilla extract
Dry Ingredients
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder Helps with lifting
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon Optional for flavor
Berries
  • 1 cup blueberries (fresh, or frozen straight from freezer) Do not thaw if using frozen
  • 2 tablespoons coarse sugar for sprinkling Optional for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream the softened butter with both sugars until fluffy, about 1 to 2 minutes.
  3. Add the room temperature egg and vanilla, mixing until smooth.
  4. In a separate bowl, stir together the flour, baking powder, salt, and cinnamon (if using).
  5. Combine wet and dry ingredients, mixing just until no flour streaks remain.
  6. Gently fold in the blueberries, taking care not to smash them.
  7. Scoop the dough into large mounds (about 2 tablespoons each) and space them on the baking sheet.
  8. Sprinkle coarse sugar on top if desired.
Baking
  1. Bake for 12 to 15 minutes until the edges are set and lightly golden, and the centers look soft.
  2. Cool the cookies on the baking sheet for 10 minutes before transferring to a rack to cool completely.

Notes

Do not overbake; the cookies continue to cook while cooling. Chill the dough for 20 to 30 minutes if your kitchen is warm to prevent excessive spreading.
