  • 8 slices sturdy bread (like brioche, challah, or French bread) Cut into chunky cubes.
  • 2 cups blueberries Fresh or frozen (if frozen, do not thaw).
  • 4 large eggs Room temperature if possible.
  • 2 cups milk Use room temperature for better mixing.
  • 1 tsp vanilla extract
  • 1/2 cup sugar
Brown Sugar Streusel Topping
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 tsp cinnamon Plus a pinch of salt.
  • 1/4 cup butter Melted.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, vanilla extract, and sugar until well combined.
  3. Cube the bread and mix it into the egg mixture, gently folding in some blueberries.
  4. Let the mixture sit for at least 15 minutes to allow the bread to soak up the custard.
  5. While the mixture rests, prepare the brown sugar streusel by combining brown sugar, flour, cinnamon, and salt in a bowl, then mixing in melted butter until crumbly.
Baking
  1. Transfer the bread mixture to a greased 9x13-inch baking dish and sprinkle remaining blueberries on top.
  2. Sprinkle the streusel topping evenly over the casserole.
  3. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes or until the top is golden and crispy.

Notes

Allow leftovers to cool before covering and refrigerating for up to 3 days. Reheat in the oven or microwave. Experiment with different toppings like powdered sugar or nuts.
