  • 8 oz cream cheese, softened Full fat tastes best.
  • 1/4 cup powdered sugar Or honey for sweetness.
  • 1 tsp vanilla extract
  • 1 pinch salt A tiny pinch enhances flavor.
  • 1 cup blueberries Fresh or frozen.
For the French Toast
  • 4 slices thick-cut bread (brioche, challah, or Texas toast) Stale or day-old bread works best.
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp cinnamon Optional but recommended.
  • 2 tbsp butter For cooking in the pan.

Method
 

Preparation
  1. Mix softened cream cheese with powdered sugar, vanilla, and a pinch of salt in a bowl.
  2. Spread the cream cheese filling on one slice of bread, then add a handful of blueberries, and top with another slice.
  3. In a shallow bowl, whisk together eggs, milk, and cinnamon.
Cooking
  1. Dip each stuffed sandwich quickly in the egg mixture on both sides, ensuring not to soak.
  2. Heat butter in a pan over medium heat and cook the sandwiches for 3-4 minutes on each side, or until deep golden.
  3. Let the sandwiches sit for a minute before slicing so the filling does not slide out.

Notes

For best results, soften the cream cheese at room temperature before using. Avoid overloading the blueberries to prevent a watery filling. Keep finished pieces warm in a low oven if cooking for a group.
