  • 8 oz cream cheese, room temperature To avoid lumps
  • 1 cup Greek yogurt For added protein
  • 1/2 cup powdered sugar Or honey for a healthier option
  • 1 tsp vanilla extract
For the Blueberry Topping
  • 2 cups fresh or frozen blueberries
  • 1 tbsp lemon juice Enhances flavor
  • 1/4 cup water
  • 1-2 tbsp sugar To taste
For Layering
  • 1 cup graham crackers, crushed For the crust layer
  • 1 cup cool whip or coconut whip Optional for extra fluffiness

Method
 

Cheesecake Layer Preparation
  1. Blend cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth.
Blueberry Topping Preparation
  1. In a saucepan, simmer blueberries with lemon juice, water, and sugar until they burst and become glossy, about 5 minutes.
  2. Set aside to cool.
Assembling the Parfaits
  1. Layer crushed graham crackers at the bottom of each glass.
  2. Add a dollop of the cheesecake mixture followed by a spoon of the blueberry topping.
  3. Repeat the layers until the glasses are full.
  4. Chill for at least 30 minutes before serving.

Notes

Try using store-bought blueberry pie filling for an even faster option. Experiment with different fruits for variety. Great for make-ahead desserts, just hold off topping with granola until ready to serve.
