Cheesecake Layer Preparation
- Blend cream cheese, Greek yogurt, powdered sugar, and vanilla extract until smooth.
Blueberry Topping Preparation
- In a saucepan, simmer blueberries with lemon juice, water, and sugar until they burst and become glossy, about 5 minutes.
- Set aside to cool.
Assembling the Parfaits
- Layer crushed graham crackers at the bottom of each glass.
- Add a dollop of the cheesecake mixture followed by a spoon of the blueberry topping.
- Repeat the layers until the glasses are full.
- Chill for at least 30 minutes before serving.
Notes
Try using store-bought blueberry pie filling for an even faster option. Experiment with different fruits for variety. Great for make-ahead desserts, just hold off topping with granola until ready to serve.
