Ingredients
  

For the crust
  • 200 g crushed chocolate cookies or graham crackers
  • 90 g melted butter
For the cheesecake filling
  • 680 g cream cheese, softened
  • 160 g sugar
  • 200 g sour cream or thick Greek yogurt
  • 3 pieces eggs
  • 2 to 3 tablespoons black sesame paste Adjust based on taste preference.
  • 1 teaspoon vanilla
  • 1 pinch salt

Method
 

Preparation
  1. Heat your oven to 160°C. Line the bottom of a springform pan with parchment if you have it.
  2. Mix cookie crumbs and melted butter, then press into the base of the pan. Bake for 10 minutes, then let cool briefly.
Making the cheesecake filling
  1. Beat the softened cream cheese and sugar together until smooth.
  2. Add sour cream, and then add the eggs one at a time. Mix just until combined, being careful not to overmix.
  3. Stir in black sesame paste, vanilla, and salt, and taste the batter to ensure you like the sesame flavor.
  4. Pour the cheesecake filling into the cooled crust.
Baking
  1. Bake for about 50 to 65 minutes until the edges are set and the center has a gentle wobble.
  2. Turn off the oven, crack the door, and let it sit for 20 minutes before cooling on the counter.
  3. Chill in the fridge for at least 6 hours before serving.
