Dry Ingredients
  • 2 cups All purpose flour Level off; do not pack
  • 2 cups Sugar
  • 3/4 cup Unsweetened cocoa powder The better the cocoa, the better the cake
  • 1 tsp Baking powder
  • 1.5 tsp Baking soda
  • 1 tsp Salt
Wet Ingredients
  • 2 large Eggs
  • 1 cup Milk or buttermilk Either works
  • 1/2 cup Oil Helps keep it moist
  • 2 tsp Vanilla extract
  • 1 cup Hot coffee Freshly brewed or instant

Method
 

Preparation
  1. Preheat your oven and grease two round cake pans; line the bottom with parchment paper.
  2. In one bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix together the wet ingredients: eggs, milk (or buttermilk), oil, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Slowly add the hot coffee to the batter; it will be thin—don't panic.
Baking
  1. Pour the batter into the prepared pans and bake until a toothpick comes out with a few moist crumbs, about 30 minutes.
  2. Let the cakes cool completely before frosting.
Frosting
  1. Frost the cooled cakes with chocolate buttercream or cream cheese frosting.
Serving Suggestions
  1. Serve with vanilla ice cream, chocolate sauce, or fresh berries.
  2. For a festive touch, add sprinkles on top.
