  • 1 pound breakfast sausage, pork or turkey
  • 1 can refrigerated biscuit dough, the standard size
  • 8 large eggs
  • 1.5 cups milk, whole or 2 percent
  • 2 cups shredded cheese, cheddar sharp cheddar or Monterey Jack
  • to taste salt and pepper
  • a pinch garlic powder or onion powder Optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x13 baking dish.
  2. Brown the sausage in a skillet over medium heat, breaking it up as it cooks. Drain any excess grease.
  3. Cut each biscuit into quarters to help them bake evenly.
Assembly
  1. Scatter the biscuit pieces in the greased baking dish.
  2. Add the cooked sausage over the biscuit pieces, then sprinkle half of the cheese on top.
  3. In a bowl, whisk together the eggs, milk, salt, pepper, and any optional seasonings. Pour this mixture evenly over the casserole.
  4. Top with the remaining cheese.
Baking
  1. Bake for 35 to 45 minutes, or until the center is set and the top is golden. If the top begins to brown too quickly, cover loosely with foil for the last 10 minutes.
  2. Allow the casserole to rest for 5 to 10 minutes before cutting to help it hold together.

Notes

You can make this casserole ahead of time by assembling it the night before and refrigerating it. Bake in the morning and add a few extra minutes if needed. This recipe is flexible; feel free to substitute sausage, cheese, or add vegetables as desired.
