Ingredients
  

For the Chile Sauce
  • 4 pieces Dried guajillo chiles Adjust based on desired heat.
  • 2 pieces Dried ancho chiles
  • 2 cloves Garlic Fresh is better than garlic powder.
  • 1 piece Onion Chopped.
  • 1 teaspoon Cumin Key spice for flavor.
  • 1 teaspoon Oregano Key spice for flavor.
  • 0.5 cup Broth Beef broth is best, chicken is an alternative.
For the Tacos
  • 3 pounds Chuck roast Shreds easily.
  • 1 cup Beef broth To pour over the meat.
  • 2 tablespoons Apple cider vinegar For balancing flavors.
  • 12 pieces Corn tortillas For crispy tacos.
  • 2 cups Oaxaca cheese Shredded.

Preparation
  1. Make the chile sauce by softening the dried chiles, blending them with garlic, onion, spices, and a bit of broth.
  2. Slow cook the beef by placing it in the slow cooker and covering it with the prepared sauce and additional broth.
  3. Shred the beef after cooking and taste the broth, adding salt as needed.
  4. To build the tacos, dip tortillas in the fat layer of the broth, fill with shredded beef and cheese, and pan fry until crispy.
  5. Serve with a ladle of consommé and any toppings like chopped onion and cilantro.

Notes

Skim and save the fat layer from the broth for extra flavor when dipping tortillas. Keep tortillas warm to prevent cracking. This dish is best enjoyed with a family-style setup for serving.
