  • 1.5 pounds Ground beef Can reduce to 1 pound if desired.
  • 28 ounces Frozen tater tots
  • 1 medium Onion Optional
  • 1 cup Cheddar cheese, shredded
  • 4 slices American cheese Optional
  • 1 cup Dill pickles, chopped
  • 1 cup Shredded lettuce For topping after baking.
Special Sauce
  • 1/2 cup Mayonnaise
  • 1/4 cup Ketchup
  • 2 tablespoons Yellow mustard
  • 2 tablespoons Sweet pickle relish Or finely chopped pickles.
  • 1 tablespoon Vinegar or pickle juice For added tang.
  • 1 teaspoon Paprika
  • 1 teaspoon Onion powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat. If using, add diced onion. Cook until no longer pink and drain excess grease.
  3. Season the meat well with salt, pepper, garlic powder, and onion powder.
Combine
  1. Reduce the heat and stir a few spoonfuls of the special sauce into the beef until thoroughly coated. Add a handful of shredded cheddar and allow it to melt.
Assembly
  1. Spread the beef mixture in a baking dish, and top with a layer of remaining cheese. If desired, add American cheese slices.
  2. Arrange the frozen tater tots over the top in a neat or scattered manner.
Baking
  1. Bake for 30 to 40 minutes, until the tater tots are crispy. For added crunch, broil for 1 to 3 minutes at the end, watching closely.
Finishing Touches
  1. Once baked, drizzle additional special sauce on top and finish with chopped pickles and shredded lettuce.

Notes

For best results, store toppings separately from the casserole when refrigerating leftovers. This meal reheats well and flavors improve overnight. Can be frozen, though the tater tots may lose some crispiness when thawed.
