Ingredients
  

For the base layer
  • 4 to 5 cups cubed pound cake or sponge cake Store bought is acceptable.
For the fruit layer
  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries) Adjust amount based on your preference.
  • 2 tablespoons sugar Use more if your berries are tart.
  • 1 tablespoon lemon juice Fresh lemon juice recommended.
For the creamy layer
  • 2 cups cold heavy cream Cold cream whips best.
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 cups vanilla pudding or custard (optional) For a thicker, more classic feel.

Method
 

Preparation
  1. Macerate the berries by tossing them with sugar and lemon juice. Let them sit for 10 to 15 minutes until juicy.
  2. In a separate bowl, whip the cold heavy cream with powdered sugar and vanilla extract until soft peaks form.
Assembly
  1. In a large trifle bowl or small cups, layer cubed pound cake, followed by a layer of macerated berries, and then a layer of whipped cream.
  2. Repeat the layers until all ingredients are used, finishing with a layer of cream and a pile of fresh berries on top.
Chilling
  1. Cover the trifle and chill for at least 2 hours to allow flavors to blend.

Notes

Don't drown the cake or it will become soggy. Use a mix of berries for varied flavor and texture. Add texture on top right before serving.
