Salad Ingredients
  • 4 cups baby spinach, fresh Use the freshest spinach available.
  • 2 cups mixed berries (strawberries, raspberries, blueberries, blackberries) Use whatever berries are in season.
  • 1 cup pecans, toasted Dry toast in a skillet for best flavor.
  • 1 cup feta cheese, crumbled Can also use goat cheese or sharp cheddar.
  • 1/2 cup balsamic glaze Store bought or homemade.
Optional Add-ins
  • 1/4 cup red onion, sliced Optional for added flavor.
  • 1 large avocado, sliced Optional for creaminess.
  • 2 cups grilled chicken, sliced Optional for adding protein.

Method
 

Preparation
  1. Wash and dry the baby spinach and mixed berries thoroughly.
  2. In a large salad bowl, add the spinach as the base.
  3. Scatter the mixed berries over the spinach.
  4. Add the toasted pecans and crumbled feta cheese on top.
  5. Drizzle the balsamic glaze over the salad just before serving.
  6. Optionally, sprinkle with a pinch of salt and black pepper, and toss gently if desired.

Notes

To maintain freshness, store separate ingredients until ready to serve. This salad can be made ahead by prepping the ingredients and dressing it last minute.
