  • 3 cups all-purpose flour, leveled
  • 1 tablespoon baking powder
  • 1 teaspoon fine salt
  • 2 tablespoons sugar or honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika optional, but adds great flavor
Wet Ingredients
  • 12 ounces beer, at room temperature
  • 1.5 cups shredded sharp cheddar shred it yourself for best melt
  • 2 tablespoons melted butter for brushing , plus more for serving
  • 2 tablespoons chopped chives or green onions optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan and line with a parchment sling if you have one.
  2. Whisk flour, baking powder, salt, sugar, garlic powder, and smoked paprika in a large mixing bowl.
  3. Fold in the shredded cheddar and chives so the cheese is coated in flour to prevent clumping.
  4. Pour in the beer. Stir gently until no dry pockets remain. The batter will be thick and shaggy; do not overmix.
  5. Scoop the batter into the loaf pan, smooth the top, and brush with melted butter. Optionally, sprinkle a pinch of extra cheddar on top.
Baking
  1. Bake for 45 to 55 minutes, until the top is deep golden and a toothpick inserted near the center comes out mostly clean. The internal temperature should be around 200°F (93°C).
  2. Cool in the pan for 10 minutes, then lift out and finish cooling on a rack. Slice while warm, but not blazing hot, for best texture.

Notes

For flavor variations, try adding jalapeño cheddar, bacon bits, or fresh herbs. For best results, use room-temperature ingredients.
