Ingredients
  

For the sauce
  • 1/3 cup low sodium soy sauce
  • 2-3 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 teaspoons toasted sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional) optional but recommended for flavor
  • 1 tablespoon cornstarch mixed with cold water
  • 1/3 to 1/2 cup water or beef broth as needed
Main ingredients
  • 1 pound flank steak, thinly sliced can substitute sirloin or skirt steak
  • 4 cups broccoli florets or substitute with snap peas, green beans, or bell peppers
  • 1 tablespoon oil for cooking the beef

Method
 

Preparation
  1. Slice the flank steak thinly against the grain. Optionally, freeze the steak for 15-20 minutes for easier slicing.
  2. Prepare the sauce by mixing the soy sauce, brown sugar, vinegar, sesame oil, garlic, ginger (if using), and water or broth in a bowl.
  3. In a small bowl, mix the cornstarch with cold water to create a slurry.
Cooking
  1. Heat oil in a large pan over high heat. Add the sliced beef and cook until browned. Remove from the pan and set aside.
  2. In the same pan, add broccoli with a splash of water. Cover and steam for 2-3 minutes until bright green.
  3. Return the beef to the pan and pour the sauce mix (excluding the cornstarch slurry) over it. Let it bubble for about a minute.
  4. Stir in the cornstarch slurry and mix well to thicken the sauce. Cook until the sauce clings to the beef and broccoli.

Notes

Keep broccoli crisp-tender to avoid mushiness. Cook it quickly and do not overcrowd the pan to maintain texture.
