Preparation
- Pat the shrimp dry with paper towels.
- Toss shrimp with salt and pepper, and optionally add garlic powder and paprika.
- Dip the shrimp in buttermilk, then coat in a mix of cornstarch and flour.
Cooking
- Fry: Heat oil to medium hot, then fry shrimp in small batches for about 2 to 3 minutes until golden.
- Air fry: Spray basket, lay shrimp in a single layer, spray lightly, then air fry at 400°F for 7 to 9 minutes, flipping once.
- Pan fry: Use a generous layer of oil in a skillet and cook shrimp in batches, turning once.
Serving
- Toss shrimp with sauce right before serving or drizzle sauce on top.
Making the sauce
- In a bowl, stir together mayonnaise, sweet chili sauce, sriracha, and lime juice.
Notes
Do not skip drying the shrimp. Cook in batches to avoid steaming. Sauce should be added just before serving to maintain crispiness.
