Ingredients
  

For the shrimp
  • 1 lb Raw shrimp, peeled and deveined Medium or large shrimp are best
  • to taste Salt and pepper
  • 1 cup Buttermilk (or milk with a splash of vinegar or lemon)
  • 1/2 cup Cornstarch For crunch
  • 2 Tbsp Flour To help the coating hold
  • 1 tsp Garlic powder Optional but recommended
  • 1 tsp Paprika Optional but recommended
  • as needed Tbsp Oil for frying or cooking spray for air fryer
For the sauce
  • 1/2 cup Mayonnaise For creamy base
  • 1/2 cup Sweet chili sauce For sweetness
  • to taste Sriracha (or hot sauce) For heat
  • 1 Tbsp Lime juice (or rice vinegar) For tang

Method
 

Preparation
  1. Pat the shrimp dry with paper towels.
  2. Toss shrimp with salt and pepper, and optionally add garlic powder and paprika.
  3. Dip the shrimp in buttermilk, then coat in a mix of cornstarch and flour.
Cooking
  1. Fry: Heat oil to medium hot, then fry shrimp in small batches for about 2 to 3 minutes until golden.
  2. Air fry: Spray basket, lay shrimp in a single layer, spray lightly, then air fry at 400°F for 7 to 9 minutes, flipping once.
  3. Pan fry: Use a generous layer of oil in a skillet and cook shrimp in batches, turning once.
Serving
  1. Toss shrimp with sauce right before serving or drizzle sauce on top.
Making the sauce
  1. In a bowl, stir together mayonnaise, sweet chili sauce, sriracha, and lime juice.

Notes

Do not skip drying the shrimp. Cook in batches to avoid steaming. Sauce should be added just before serving to maintain crispiness.
