Ingredients

For the Cake Layers
  • 1 box graham crackers or vanilla wafers Choose a cookie that absorbs moisture well.
  • 4 medium ripe bananas Must be ripe but firm for best texture.
For the Creamy Filling
  • 2 cups heavy cream Whipped to soft peaks for a light texture.
  • 1 cup vanilla pudding mix Use a good quality instant pudding.
  • 2 cups milk For mixing with the pudding powder.

Method

Preparation
  1. In a mixing bowl, whisk together the vanilla pudding mix and milk until thickened.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Gently fold the whipped cream into the pudding mixture until combined.
  4. Slice the bananas into thin rounds.
Assembly
  1. Line a rectangular baking dish with a layer of cookies.
  2. Spread a layer of the creamy filling over the cookies, then add a layer of banana slices.
  3. Repeat the layers, finishing with the creamy filling on top.
  4. Cover and refrigerate for at least 4 hours, or up to overnight.

Notes

For best results, chill overnight and serve the cake well chilled. Bananas may darken slightly after slicing, but the flavor remains unaffected.
