Blender Method
- Add oats to the blender first and blend for about 10 to 15 seconds to make a flour-like texture.
- Add bananas, eggs, milk, baking powder, cinnamon, salt, and vanilla. Blend until smooth. Let the batter sit for 2 minutes to thicken.
- Warm a nonstick pan or griddle over medium heat and lightly grease with butter or oil.
- Pour small circles of batter, about 1/4 cup each. Cook until bubbles appear and edges look set, about 2 to 3 minutes.
- Flip and cook another 1 to 2 minutes. Keep warm on a plate while finishing the batch.
Bowl Method
- Mash bananas well, whisk in eggs and milk, then stir in oats, baking powder, cinnamon, and salt.
Notes
Pancakes are forgiving but use very ripe bananas for the best flavor. Cook at medium heat to achieve a good texture.
