Preparation
- In a skillet over medium heat, melt the butter. Add brown sugar and a pinch of salt. Stir until smooth.
- Add sliced bananas and cook for about 1 to 2 minutes until softened. Stir in vanilla and cinnamon, then add rum if using, allowing it to bubble for 20-30 seconds.
- Let the banana topping cool slightly for 5 to 10 minutes.
Layering
- In small cups or jars, add crushed cookies, then pudding, then a spoonful of the warm banana topping. Repeat layers if cups are tall enough.
- Finish with whipped cream and a drizzle of extra banana topping.
Chill and Serve
- If desired, chill the cups for at least 1 hour for a set texture. Serve immediately if preferred warm.
Notes
For best results, serve immediately topped with fresh banana slices or cookie crumbs. Can be prepared in advance and chilled; add whipped cream just before serving.
