  • 2 pieces very ripe bananas The browner, the better for sweetness.
  • 1 cup water
  • 3/4 cup sugar (white or light brown) Both work well.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional) Highly recommended for extra flavor.
  • 1 pinch salt Tiny pinch to enhance flavors.

  1. Peel the bananas and slice them into coins. Toss them into a small saucepan with the water and sugar.
  2. Set the pan over medium heat and stir until the sugar is mostly dissolved.
  3. Let it come to a gentle simmer. Avoid high heat to prevent boiling over.
  4. Simmer for about 8 to 10 minutes, stirring occasionally, and lightly mash the bananas with your spoon as they soften.
  5. Turn off the heat. Stir in the vanilla, cinnamon if using, and the pinch of salt.
  6. Let it sit for 5 minutes to allow the flavors to meld.
  7. Strain into a jar, pressing the banana solids gently to extract the syrup.

Notes

Best if stored in a clean jar in the fridge, consume within 7 to 10 days. For a richer flavor, use light brown sugar. If syrup is too thick, stir in a splash of hot water. Strain well for coffee to avoid banana bits.
