- Peel the bananas and slice them into coins. Toss them into a small saucepan with the water and sugar.
- Set the pan over medium heat and stir until the sugar is mostly dissolved.
- Let it come to a gentle simmer. Avoid high heat to prevent boiling over.
- Simmer for about 8 to 10 minutes, stirring occasionally, and lightly mash the bananas with your spoon as they soften.
- Turn off the heat. Stir in the vanilla, cinnamon if using, and the pinch of salt.
- Let it sit for 5 minutes to allow the flavors to meld.
- Strain into a jar, pressing the banana solids gently to extract the syrup.
Notes
Best if stored in a clean jar in the fridge, consume within 7 to 10 days. For a richer flavor, use light brown sugar. If syrup is too thick, stir in a splash of hot water. Strain well for coffee to avoid banana bits.
